Smokey and Charred Camp Palomas
If you’re looking to add that camp theme right into your cocktail, this is a great recipe. Charring the grapefruit will instill that campfire vibe quickly and efficiently. I made this for our first dinner party post-pandemic. I made it right on our grill on the back patio, but using the grates over a campfire works just as well if not even better!
3 pink grapefruits, halved
6 oz Mezcal (or Tequila)
8 oz Fresca
1 lime, cut into 6 wedges
1 tbsp honey or liquid agave
Over a hot campfire, place your halved grapefruits face down above the flames for about 3-4 minutes or until they are charred similarly to the picture above. Remove them and set them aside too cool while you mix the rest of the ingredients.
In a pitcher, mix the rest of the ingredients and give a stir. After the grapefruit is completely cooled (no one wants a hot cocktail), squeeze the fresh juice straight into the mixture and combine. Pour the cocktail over ice to enjoy at camp on a hot day.
