Lightweight Trail Pancakes with Lemon and Blueberries

1 cup pancake mix (I use Kodiak Cakes for protein)
1 lemon zested (dehydrated if backpacking)
1 cup fresh picked blueberries (dehydrated if backpacking -  soaked)
3/4 cup water + 3 tbsp

Combine pancake mix, 1/2 zest, half the blue berries and 3/4 cup of water. Cook in pan flipping when bubbles cover the top of the batter. For the sauce, mix together the remaining ingredients until simmered down to a hot sauce consistency. Serve over the pancakes immediately.
