Simple Breakfast Tacos for Camping
2 eggs
3 small corn tortillas
2 tbsp dices pancetta
1/2 avocado
2 tbsp sour cream
2 tbsp salsa
Hot sauce (I use rooster sauce)
Pan fry your pancetta, add in your scrambled eggs until cooked. Warm your corn tortillas and load them up with the ingredients. If you're backpacking, you can use the powdered eggs and maybe some bacon bits. You can use a single pack of sour cream (Wendy's) and some salsa packs (Taco Bell).
