Simply The Best Cast Iron Camping Beans

Camping beans are a staple should not be overlooked. While canned baked beans may have been great in college, this recipe will show off your gourmet side. It’s a great recipe to elevate the camping experience while slugging back craft IPAs at camp with your crew.

This makes a great meal dinner when served with my Cornbread with Cheddar and Charred Poblano

1 lb of bacon
1 green pepper, diced
1 yellow onion, diced
2 (15oz) cans of white beans
1 (15oz) can of Heinz Beans (or just sub a third can of white)
2/3 c brown sugar
1 c ketchup
1`tbsp Worcestershire
2 tbsp ground mustard
1 tbsp sauce (optional)

Get your cast iron skillet up to heat either over hot coals, rocks or the camp grill over the fire. Add the bacon and cook completely. Use a slotted spoon to remove the bacon and set aside. Reserve half of the grease to sauté the green pepper and onions. When the veggies are transparent, add the rest of the ingredients and mix lightly so you don’t crush the beans. Cover the skillet tightly in foil and cook over coals or the fire on the camp grate for an hour until a crust appears around the edges. Let the beans cool for 15m before serving to let the sauce thicken up a bit.
