Fresh Catch Wild Atlantic Salmon Bagel Camp Breakfast

2 bagels sliced open
8 tablespoons mascarpone cheese
Pre-cooked wild Atlantic salmon chunked
Lemon wedges for serving

Open the bagel and spread each of the four halves with the mascarpone cheese. Crumble the salmon over each and serve with a lemon wedge for squeezing over it. This recipe is great for a quick breakfast or lunch on the trail that won't involve your camp stove. Just make sure the salmon is consumed early in your hike and even better to keep it fresh on a cold winter hike.
