Miso Mushroom Camp Stew with Lightweight Option

8 cups water
3/4 cup barley
3/4 cup lentil
4 tablespoons miso paste
2 cups of button mushrooms sliced
2 carrots sliced to about 1/2 inch slices
1/2 onion diced
2 stalks of celery sliced to about 1/2 inch slices
handful of parsley chopped
cracked pepper to taste

Add all ingredients into a pot, boil for 10 minutes, then simmer for 40.

To dehydrate for camping, just spread the stew out onto plastic trays and dehydrate it until crumbly. You can take the lightweight crumbled mix and rehydrate it with water and boil at camp.

Makes 8 servings, but for a big day out, I could easily eat 2 servings
