Trail Blazing Diablo Sausage and Peppers
2 Italian sausages sliced 1/2 inch coins
1/2 yellow pepper diced
1/2 red pepper diced
1/4 red onion diced
1/2 can of Italian plum tomatoes
2 pickled peppers diced
2 cloves garlic finely diced
1 teaspoon olive oil
1/2 teaspoon chili flakes
1/2 tsp oregano
Dash of salt & pepper for taste
2 crusty baguettes with centers of bread spooned out*

To cook at campsite, break the ingredients into bags. The first being the sliced sausages, next the fresh peppers, onions, garlic and olive oil, finally the third being the tomatoes, pickled peppers, garlic and spices. You could just as easily cook at home before leaving and store in a Thermos to keep warm until you are ready for lunch.
In your camp pan, get a nice sear on your sausage. Next, add the fresh peppers and onions until they become slightly soft. Finally add the tomato mix and simmer with a lid for about 3-5 minutes or until heated through. Spoon the mixture into the baguettes and enjoy.
