Backpacker's 'Just Peachy' Campfire Cobbler

peachcobblerb.jpg

Cans of peaches in juice (small individual sizes)

1/4 cup of Louisiana Cobbler Mix (bought at Safeway)

Start by removing the labelfrom the can(s) so they won't burn in the fire. Next, mix enough of the juice from the peaches into your cobbler mix to get a batter consistency and drain the rest out of the peaches. Pour the batter mix on top of the peaches and put the can top back on. Place the cans into thehot coals in the fire and leave it go for 10 minutes before checking.  Mine had a bit of a bubble over down the side of the can, but I don't think I drained themwell. Once the batter has baked into a nice crust, remove the can(s) and cool them a bit for handling.

Enjoy!

Serves 1 (or as many cans & mix as you bring along)
