Campfired Vegetarian Nachos with All The Fixins
1 bag of blue corn tortilla chips
1 package of ground Smart Life taco soy crumbles
1 package of
Jar of salsa (any work)
1 can of black beans (drained and rinsed)
1 avocado diced
1 tomato diced
3 green onions diced
1/2 green pepper diced
1/4 c diced jalapeno (optional)
1/2 c sour cream (optional)
In a camp pot or large pan (with oven access), lay down your tortilla chips and set aside. In another pan, combine the soy crumbles with half the jar of salsa. Heat through and scatter over the nachos. Next, sprinkle over the black beans, the cheese, and the diced peppers. Throw into an oven (or foil covered over a fire) just until the cheese melts. Toss over the rest of the ingredients and serve hot. From experience, these are best served with a cold beer and friends.
NOTE: I use soy because it stores for long periods of time in a cooler. I usually serve this in replacement of dinner on the last night of camp trips. It's easy and tasty.
