Cast Iron Chicken Quarters with Brown Rice Pilaf
Cast Iron Chicken Quarters with Brown Rice Pilaf is a literal one-pan wonder at camp. Follow the easy recipe below for a filling and delicious meal to serve at camp. This is a hearty meal that will keep you going after a long day of adventure.
2 tsp olive oil
2 tbsp butter
1 yellow onion, minced
1 tsp dried minced garlic
1 carrot, small diced
4 sprigs of thyme, stems removed
1 c brown rice
1 3/4 c water
2 tsp liquid seasoning
2 chicken quarters
Poultry rub
Dust your chicken quarters with your favorite poultry seasoning and set aside.
Next, heat your pan over a medium-high heat using your camp stove or fire. To the pan, add the oil and butter until melted. Toss in the onions, garlic and thyme and cook until onions are soft. Stir in the rice, water, liquid seasoning and carrots.
Nestle in the chicken quarters, cover with foil and cook for 45m. Check it every 15m to ensure there is enough water. If it looks to be dried up completely while cooking add 1/4 c more at a time.
Remove foil, rest for ten minutes then serve while still warm.
