Keto Camper's Stuffed Tomato with Bright Tuna Salad

1 can of tuna
1 tbsp of capers
1 tsp of lemon zest
2 tbsp chopped fresh parsley
1 lemon juiced
1 tbsp of olive oil
3 tomatoes (tops cut off and centers removed)

Mix all of the above together (above tomatoes) and let stand in the fridge for at least an hour. Just stuff the tomatoes with the mix and take along in a tupperware for your big hike or eat at a car camp.
