Trail Chicken Wrap with Authentic Thai Flavors
1/2 c finely diced cooked chicken
1/4 c finely chopped water chestnuts
3 tablespoons chopped scallions
3 tablespoons finely chopped red pepper
1 teaspoon crushed peanuts
1 tsp sesame oil
1/2 teaspoon garlic chili paste (or less for lower heat)
1/2 teaspoon soy sauce
4 or 5 butter lettuce leaves washed
Add all ingredients into a ziplock and mix completely. Double bag & take it along on your day-hike along with your lettuce to use as wraps in a separate bag. Just spoon the mixture into the lettuce, roll them up and enjoy!
