Beet and Avocado Open-Faced Picnic Sandwich

Multi-grain bread (I used Dave's Killer Bread)

1/4 avocado

1 organic beet sliced

Hummus (easy single servings at Costco for the trail)

Fresh dill - to taste

 

This is a pretty easy recipe and I eat it almost everyday lately. I have loved beets since I was a kid and am glad they are becoming 'hip'. It is easy to find them now in the produce aisle already cooked. We don't have to suffer with only the canned versions now filled with preservatives. Just spread your hummus on your bread, toss on the chunks of avocado/beets and sprinkle with fresh dill to your taste.
