Campfired Loaded Vegetarian Nachos

1/2 package of Smart Ground Mexican Crumble (soy)
3 handfuls of blue tortilla chips
1/2 cup (or more) shredded Mexican blend cheese
2 tbsp 2% greek yogurt or sour cream (optional)
1/2 avocado diced
1/2 ripe tomato seeded and diced
1/4 cup diced raw onion
1/4 cup cilantro chopped

Heat the soy crumbles through in a pan. Take a large sheet of foil and place the nachos on the bottom leaving plenty of room to cover the pile. Sprinkle on the soy crumbles and nachos, fold all sides up and place on the grill or a metal grate above your camp flames just for a minute or so. You just want the cheese to melt here, nothing requires cooking. Open your foil pouch and sprinkle your remaining ingredients on top and enjoy. This makes a great appetizer or mid-day camp snack.

Serves 4 as an appetizer or 2 as a meal
