Camper's Savory Sausage Stuffed Mushrooms

1 lb mushrooms, rinsed with stems removed & set aside
1 lb ground sausage, hot or mild will do
1/4 cup of bread crumbs
3 tablespoons of finely grated parmesan
1/4 red onion finely diced
1/2 red pepper finely diced
2 cloves of garlic
1 teaspoon parsley
1/2 teaspoon of ground pepper
1/2 teaspoon of salt

pinch of crushed red pepper
1 teaspoon worcester
1/2 cup of marinara sauce (jarred is fine)

In a pan or dutch oven at camp, brown and drain the sausage. Set aside while you saute the onions, red pepper and garlic. Into the mix, add back into it the sausage, the spices and the bread crumbs. Stuff the mushrooms with the mixture and line them in one layer onto a large foil pack. Spread the marinara over the top evenly and wrap the foil ends tightly. Put the pack over the hot coals in the bottom of the fire and cook them for about 10 minutes. The inside is already cooked so you are looking for the mushrooms to cook and soften while the middle heats through.

Serves 6 as an appetizer or 3-4 as a meal
