Make-Ahead Camp Pasta Salad with Sun-Dried Tomatoes and Chili
1 1/2 cup of cooked whole wheat spiral pasta
2 tablespoons of hummus
4 sun-dried tomatoes diced up (with 2 tsp of the oil)
4-5 green olives (any variety, mine just happened to be almond stuffed)
Pinch of red chili flakes
Salt & pepper to taste
Mix all of the above ingredients. Pop it into a Ziplock or Tupperware and throw it into your pack. It is that easy. The longer your walk, the better marinaded it will be by the time you reach your destination. This is meant to eat at room temperature.
Serves 1 hungry hiker or 2 not-so-hungry hikers
