Simple One-Pan Beef Fajitas for Campsite
This fast and easy recipe for fajitas will be a ‘go-to’ at camp considering it’s easy. If you’ve been outdoors adventuring all day, you will want to keep this in your back pocket. 1 c beef strips
2 tbsp olive oil
2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp sea salt
1/2 tsp fresh ground pepper
1/4 tsp chili flake
1 vine-ripened tomato
1/2 ripe avocado diced
Nando's Piri Piri hot sauce, or favorite
Corn tortillas, 3" or street taco sauce
Sour cream, optional
Shredded lettuce or micro-greens
In a ziplock for your camp cooler; add the beef strips, spices and olive oil. Smoosh around with your hands to coat and toss in the cooler for up to three days.
At camp, heat your skillet, add your meat and to quickly brown being careful to not overcook. This will make it tough. When it's starting to brown, dice the tomato right into it and let that cook down for a few minutes until soft. Take it off the heat, add the avocados on top and serve with the tortillas, sour cream and hot sauce. I just put throw it in the middle of the table and let everyone serve themselves.
