Hatch Green Chili Cesar Cooler Dressing

Hatch Chili Cesar Dressing will make a tasty addition to your camp cooler. It’s the perfect way to liven up your greens while on the road. It includes a rich and complex flavor profile that is both salty and tangy. I love it over salads, but it’s also good to dip crackers into or drizzle over sautéed veggies.

1 c olive or avocado oil
1 c Parmesan Romano cheese
2 roasted hatch chilies, skinned & seeded
1 tablespoon Dijon
2 cloves garlic
1/4 tsp black peppercorns
4 anchovy filets (optional)
Pinch of red chili flakes
Pinch of smoked red paprika

Add everything into a food processor and blended purée until creamy and blended to a dressing consistency. Store in a jam jar in a the fridge or cooler for up to a week when stored properly.
