Lime and Avocado Picnic Chicken Salad
Filled with flavor and healthy ingredients this recipe will make a light lunch that can be stashed in the cooler for your camp trip as well as being keto friendly. This is a tangy and lightened version of a chicken salad. It’s best served on delicate butter leaf lettuce leaves. If you’re heading out on a day trip, it’s a perfect picnic chicken salad to sustain your adventures without weighing you down. 2 chicken breast, cooked & diced
2 celery ribs, diced
2 avocado, diced
1/2 Granny Smith apple, minced
1 shallot, minced
2 tablespoons parsley, chopped
2 teaspoons oregano, minced
1/4 teaspoon ground pink Himalayan salt
1/8 teaspoon cracked pepper
1/8 teaspoon ground cumin
1/2 cup plain yogurt (dairy free optional)
3 tablespoons Dijon mustard
1 lime, juiced
Head of butter leaf lettuce, for serving
Add everything into a large bowl and mix throughly. Let the salad stand in cold storage for two hours before serving. Serve cold with butter lettuce leaves.
