Trail Food Snack: The Best Raw Lemon Amazeballs

2 c unsalted raw cashews
2 c dates
1 tbsp vanilla
1 tbsp lemon oil
1 tbsp lemon concentrate juice
1 c non-sweetened dried coconut flakes
1/2 tsp sea salt

Blend the cashews in a food processor until it forms a fine powder. Add the dates, vanilla, lemon oil and lemon concentrate and continue to mix together until the dates are chopped down to small pieces. The mix will be a bit wet, but don't worry it's supposed to be. Set aside the mix and clean/dry the processor. Add in it the coconut shreds and the salt. Grind the mix until the shreds are the size of rice grains. Grab about two tablespoons of mix and roll into balls, then drop into the coconut mix and roll to cover completely. Refridgerate the balls for at least two hours then store them either in the freezer or fridge until your next adventure. 

Makes 15 balls
