Mason Jar Fresh Herb Dressing for a Camping Cooler

You won’t find a better tasting or better for you dressing than one you make for yourself with garden herbs. The fun of this dressing is that you can use whatever you have on-hand and experiment with flavors. I make enough to last in the cooler for the week and use it on pre-dinner salads.

This makes a perfect salad topping to compliment our cast iron pizzas such as our Three Cheese Chimichurri Pizza with Mushrooms, Peppers, and Onions or our Youngstown White Pizza.

1/2 c parsley, chopped
1/2 c cilantro, chopped
3 tbsp oregano, chopped
1/2 tsp red pepper flakes
1/4 c feta
3/4 c avocado oil
1/4 c red wine vinegar
Salt/Pepper to taste

Mix all of the ingredients together and pulse with a immersion blender until creamy, but still with a nice texture. Pour your mix into a mason jar and screw on the lid tightly. This will last in your cooler for about a week while you’re out adventuring. It can be used as a meat or chicken marinade as well as a refreshing salad dressing.
