Wire Cage Grilled Campfire Wings

Wings are charred to perfection in this ‘s’mores basket’ making an easy and delicious camp meal. You can also use any long handled cage available to you, I have also seen shrimp cages that would work here. They are much easier to turn them all at once and ensure they aren’t sticking to grill grates over the campfire. Once the chicken is properly cooked the skin will actually release itself from the wire rack as well, just like your home stainless steel pans. You can use any wing sauce you like, but here I outline the classic wing sauce.

1 lb wings, trimmed to drums & flats
1/4 cup wing sauce
2 tbsp butter (I use Kerry Gold)

Blue cheese or ranch dressing, optional to dip

Ensure your campfire has been going for a bit so that it has a nice red base for heat, but without the intense smoke you’ll get at the start of a fire.

In your cage, add the wings and close the latch to ensure they are secure you will see in the picture included in this recipe. Place the cage over the grates slightly indirectly from the most intense heat and let it go for two minutes. Every two minutes, turn the cage over and readjust to ensure even heating across the whole cage without charring too much in one area.

Meanwhile, in a sauce pot on your camp stove, heat both the wing sauce and the butter until bubbling slightly and turn off heat. You don’t want to boil, it will separate the butter and sauce and cause a slight cuddle, though it will still taste good!

My wings pictured were fairly large and took about 20-22 minutes to complete. Make sure your chicken is cooked completely through and juices are running clear.

Toss the hot grilled wings into the sauce and serve with sauce.

Serves 2 as a meal or 4 as an appetizer.
