Strawberry and Rhubarb Easy No-Sugar Trail Roll-Up - Lightweight Backpacker

It's hard getting your fruit in when backpacking and camping, but this is a tasty breeze. It ends up very lightweight and will store well. If you’re looking to further your love for the strawberry and rhubarb flavor combination, we also have The Easiest Strawberry and Rhubarb Jam recipes.

4 c strawberries, stemmed and quartered
2 rhubarb stalks, diced
1/4 c agave liquid, optional

Heat a saucepan to medium-high heat and at all the ingredients. Cook down the fruit until it's all gone to liquid. At this point, cool it for 15 minutes. You can either use a fine mesh strainer to push the liquid through with a spatula to remove seeds or just pour it straight out into your dehydrator plastic trays. I don't mind the seeds so I don't bother, but either way is fine. Set it to 135 for 6 hours or so, just until it's merely tacky, but not wet. Cool it completely and lay cut sections out onto plastic wrap to roll it up with plastic ensuring the layers don't stick to each other. .
